How a Polish hotelier is elevating guest experience with Google AI

An interview with Grzegorz Jarzębski, Polish hotelier and hospitality consultant.
My very first job out of university was as a massage therapist at a hotel, a role where I listened closely as guests shared feedback about their stay. Also, having studied medicine and psychology, I quickly realised I had an instinct for understanding guests' needs, which helped me do well. Twenty-five years later, I own one hotel, manage several others, consult across the industry, and teach hospitality at a university.
Because of my medical training, I was taught to diagnose a problem before treating it, and I approach running hotels the same way, using data to get a clear picture of business realities and operational inefficiencies before crafting effective solutions.
For years, I’d pour over spreadsheets, sales reports, and commercial metrics to uncover these business insights, but it was an incredibly time-consuming process that left me with little room to connect with guests or enjoy personal passions like sports. I used to be a total AI skeptic, but when I participated in Skills of Tomorrow: AI, a five-week Google training programme in 2025, I found that AI could make sense of data far faster than I ever could, freeing me up to focus on guests.
Today Gemini and Gemini Notebook are integral to my daily workflow. As a hotel manager and hospitality consultant, Gemini-powered agents help me drive efficiency and sales, while Gemini Notebook enables me to power through complex financial and market analysis and turn data into actionable insights. For instance, I put it to work on five years’ worth of historical marketing data for one of my hotels to uncover learnings we could leverage to improve our outreach.
“Gemini Notebook spotted that our conference and event packages were bogged down with far too many options, so we streamlined five packages into two straightforward options, cutting our quoting time by 40 percent. By simplifying our offers, guests could easily spot the option that best fit their needs, boosting overall booking revenue by 10 percent.”
Beyond refining our marketing offers, a custom pricing agent has also transformed our room booking strategy. By quickly analysing room occupancy data across three hotels, it allows us to adjust pricing dynamically, based on guest demand.
“Over the past year, our Gemini-powered pricing agent has driven an 8% increase in revenue per available room and cut monthly reporting time from two days to just two hours.”
Personally, the real game-changer for me has been using Gemini to help plan my day. Every morning, Gemini automatically scans my Google Calendar, Gmail inbox, and task list, and helps me lay out a clear set of priorities. As a manager and consultant, it’s all too easy to focus on the loudest voice in the room, but now I work responsively rather than reactively. This shift has also unlocked precious time for me to train and compete in sports like elite-level kettlebell tournaments.
In all these ways, Google AI has helped transform raw data into meaningful insights that drive us forward, saving me and my team valuable time. By stripping away tedious manual tasks, staff can step away from their computer screens and take better care of guests. My advice to other hoteliers is to embrace AI as a way of bringing authentic hospitality back to the hospitality business.
